Bourbon is one of the most prevalent types of whiskey out there. For great bourbon, we needed great corn. In search of sourcing local grains, we turned to our friends Jeff and Rita Glazik of Cow Creek Farms. They're the folks that grow the deep maroon "bloody butcher" variety for our Red Corn Bourbon. When distilling with that spirit, we found that using that heirloom variety gave the spirit a mineral-forward taste. Since been experimenting with even more bourbons with different corn they grow on their farm.
Cow Creek is a small family farm owned and operated by Jeff and Rita along with their four children: Will, Clayton, Dallas, and Abby. They use 100% organic farming practices we minimize our environmental footprint on the land. Located near the start of the Middlefork River, southeast of Paxton, IL, they've been focusing on sustainable farming practices since 2002.
