Our bourbon has a higher rye content in our mash than most bourbons on the market. This whiskey tastes the most familiar, but tones down the sweetness from the corn and adds a spicier depth to our crowd favorite.

Made with the heirloom variety Bloody Butcher red corn from Cow Creek Farms in Paxton, IL. This bourbon takes a familiar mash and tones down the brightness of those flavors and adds a mineral-like richness and spice.

The Smoked Rye is close to our hearts as an original concept dreamt up by founder Judson Bergman, whose interest in creating a rye whiskey made with smoked grains was one of the ideas that got this all started. It's a complex and cohesive whiskey with a light white-pepper spice, a smokiness that is subtle on the nose but blossoms on the palette, and notes of citrus and pear.

Generator Malt Whiskey is a late-2020 fermentation, distillation, and barrel-aging experiment made in collaboration with our neighbors at Metropolitan Brewing. Made from their Generator Beer and aged in a used single malt barrel.

In our early experimentations with grains, we were drawn to the character of spirits made with applewood smoked malted barley. We primarily use this our signature Single Malt Whiskey, but we let curiosity drive our decisions around here and occasionally include smoked grains in more traditional mash bills.

For this single barrel release, we collaborated with Pravda Records for their 40th Anniversary and landed on a nutty, sweet and spicy rye that has been aged for 3 years in Minnesota white oak. Notes of vanilla and cola nut are met with cinnamon spice and candied orange for a rich rye that is as delicious on its own as it is in a Manhattan.
